OUTPOST 1 "Salt"

In this episode of Salt, Fresh & Field Outpost I quickly discovered that this ancient ingredient can actually be found close to home.

We have salt in our blood. It is an essential nutrient that allows our bodies to balance fluids and it has a direct role in nerve transmission and mechanical movement.

Saltwater is the engine of the earth. It covers 71% of the planet and it’s vast tidal movements and currents that determine oxygen levels, weather patterns and human migration.

All salt, whether it be fine fleur de sel or industrial rock salt, is derived from the breaking up of igneous rocks close to the earth’s crust. Through the wearing down of mountains and rock by the dissolving action of rain and the power of rivers and streams, trace amounts of salt and other minerals are washed from the earth to river estuaries where they are pulled around the globe by tides and currents. Being ‘the salt of the earth’ is high praise indeed.

Salt was a paid as salary during the Roman age and up until relatively recently, was the only method of preserving food in temperate and tropical climates.

Now ubiquitous and taken for granted, the creation of sea salt is an ancient process that has changed very little over the past 4 centuries.

Salt is an ingredient in your kitchen that you’ve likely never really thought about. It’s a critical element to good cooking and it can make, or break, a recipe (do not mis-read quantities…). Yet it seems like something that doesn’t actually come from somewhere at all.
